I have found my favorite new recipe blog. It's called BudgetBytes. The lady works to make the meal as cheap as possible. Here's the
link. I'm just now really learning how to cook scratch made meals. Yes, I know I'm 31, I should know this stuff by now. I only know how to make a few meals though and want to broaden my horizons.
Last night I made a
Yellow Rice Chicken Skillet and it came out delicious. All the ingredients costed me $18 though, because I didn't have any of the spices, but now that I have them, it will be cheaper in the future.
To tell you the truth it smelled really weird when I was cooking it. It must have been the tumeric or cumin. I've never cooked with those spices before. The end result came out great though and it was very flavorful, you could even taste the hint of cinnamon in it. All the spices blended nicely and the rice and chicken were fantastic. I was a bit skeptical there would be enough food for my husband to eat, since it only called for 4 chicken thighs, but there was so much rice. Both of us had enough to eat, and it was relatively healthy too.
The recipe was quite simple to make. Did take a while with all the steps though, so if you're looking for something quick to make, this isn't it. Since becoming disabled though, I'm not working, so I have time to putz around the kitchen. I enjoyed the recipe because it was simple to make, since I can't make elaborate meals because I can't stand longer than 10 mins at a time. I just set timers and went and sat down between steps.
I highly recommend this recipe. Don't ask me about substitutions or in depth cooking techniques, I'm just learning how to cook, so all of this is new to me. Ask me in a year, I might be doing my own recipes by then.
This is how it came out:
Definitely check out her site. There are so many recipes on there. Tonight I'm going to make
Herb Roasted Pork Loin and I'm going to throw some potatoes on the pan to cook with it. I will let you know how it turns out tomorrow.
